 | Mother's Day Lavender Honey Cake | | This past Easter I made a cake based on a recipe I got out of one of my favorite cookbooks "Like Apples for Jam", I tweaked the recipe a bit and what came out of it was a room full of friends asking me for the recipe! Well my friends here it is, Happy Mothers Day!
Lavender Honey Cake  1/4 pound plus 3 tablespoons of organic Butter 1/2 cup of Dark Brown Sugar 1/2 cup of wildflower honey 1 2/3 cups organic flower 1 1/2 teaspoons of Baking Powder 1/2 teaspoon of cinnamon 2-3 tablespoons of lavender buds 2 eggs beaten 1- 8"-9" inch springform pan/cheesecake pan- greased
Frosting 2 cups confectioners sugar 7 tablespoons butter softened. 1 teaspoon of good quality vanilla Directions: Take a small sauce pan and put in the butter, brown sugar, honey and lavender buds, heating gently until the butter has melted and the sugar dissolved-allow to cool 10 or so min's. Preheat the oven to 350. Mix the flower,cinnamon, and baking powder together. Beat your 2 eggs in a small bowl. Once the heated mixture has cooled{you do not want to cook your eggs!} Mix everything together umtil smooth. Pour into your greased cake pan and bake for 35-40 mind or until a toothpick comes out clean. Once it has cooled you can put the icing on it. To make the frosting sift yout icing sugar, add the butter and beat uintil smooth, the add the vanilla. Spread it all over your cake making sure that you eat lots along the way and then sprinkle some extra lavender buds over the top to make it look pretty. ~Enjoy with a cup of peppermint tea~ | | | | |
